Dodo Gizzard

Dodo Gizzard is a dish which is somewhat synonymous with parties!  Dodo Gizzard is basically gizzard, dodo, and stew, however, let’s be fancy and call it Gizdodo!  A mix of diced plantain and finely chopped gizzard stir fried with a selection of ingredients. A complimentary side for rice dishes or may be eaten on its own as a snack.
